I’m a lover of Anzac biscuits. I’ve made them a trillion times before {maybe not a trillion, but you know what I mean}. These ones are the business if you want to try a standard recipe. This year I tried something new, and I’m oh-so-glad I did. This is an Anzac slice recipe with choc-chips. Choc-chips make EVERYTHING better.

For those who aren’t in Australia, you might be wondering what on earth an Anzac biscuit is. You can probably Google for the whole story, but it’s something that mothers and wives of men who were away at war would make. They were worried their loved ones weren’t eating well enough, so they’d make these and ship them. They were cheap to make and I don’t think they went off quickly.

Anzac Day is on 25th of April and this year we’ve already organised Ma to look after the girls so we can go to the service. It’s the 100th year and pretty special. We try and go every year, but it was a little hard last year with Lulu being so small.

Back to the slice, though. I’ve made this twice in the past week. The kids, think it’s the best thing ever, and in the second lot I broke up a whole heap of their Easter chocolate and threw it in.

Ingredients

Scale

1 cup plain flour
1 cup rolled oats
1 cup brown sugar
½ cup desiccated coconut
125g butter
¼ cup golden syrup
¼ teaspoon bicarbonate soda
200g choc-chips (or chocolate, chopped)

Instructions

1. Preheat oven to 160 degrees Celsius. Line a square baking tin {25cm by 25cm} with baking paper, or whatever slice tin you have.
2. Combine the flour, oats, brown sugar and coconut into a bowl.
3. In a small saucepan, place the butter and golden syrup. Cook over a low heat until the butter is melted. Stir to combine.
4. Add in the bicarbonate soda, and stir. This will puff up. It’s my favourite bit. I love the puff!
5. Add to the dry ingredients and mix to combine. Put a tea towel over your bowl and go and dance for 15 minutes. You want the mixture to cool so that when you add in the chocolate it doesn’t all melt and become a melty mess. A yummy mess, but it’s not how you want it.
6. When it’s cool, add the chocolate in and stir to combine. Add to your prepared tin, and smooth over with the back of a spoon.
7. Cook for 25-30 minutes or until golden. Allow to cool slightly and then cut into squares.

  1. I don’t attend a service on ANZAC Day but I do make an ANZAC slice. Mine has golden icing on the top and after your inspired idea, it’s now going to be full of chocolate chips! Even more nom!

  2. Is it chewy slice or crunchy slice? Either way i bet it’s yummy slice!

    • Chewy! I guess if you wanted it crunchy you could cook it longer?

    • And emotional. My father-in-law has passed away, and it’s at this time of year I miss him most.

  6. Delish! I might need to make this for lunch box treats too. After I sample a batch for myself. Of course. Must take one for the team before passing them onto the kids, right? I’m a nutter who replaces sugar and butter with stevia and coconut oil so I’m totes going to see if it pans out with this great slice too! x

  10. Just found a hidden stash of left over Easter eggs (strange but true) so am going to be making this for sure. I’ve had a lemon iced Anzac slice on repetition for the last 2 weeks so the girls would like the change! The girls school had an ANZAC service yesterday which was really quite emotional and we are going to a dawn service on Saturday too.

My Dad was in the army reserves when we were kids so it was always huge. This year I’m having a weekend getaway without the kids and off to a big ANZAC ceremony.   17. I just made these but they didn’t seem cooked even after cooling for 5-10 min. Just cooked them for another fifteen minutes and not confident they will cool firm. Very squishy.

  19. Before I even got to the Easter chocolate part of the post I was like yes some thing to use all that chocolate loving grandparents and godparents have given.. my children are way to blessed with loving family members.

    • We have a whole shelf on the fridge full. I need to do a lot of baking!
