I usually serve it with tortilla chips, but sourdough bread and pita chips work well too.

At first I thought the combination of red pepper jelly and coffee on top of a ham sounded crazy. But boy am I glad I tried it! The coffee acted as a tenderizer and broke down the pork meat so that it was moist and tender. The red pepper jelly sweetened the sauce and added a subtle kick. It was the juiciest ham I’ve ever had! Altogether it takes about 2 hours for this masterpiece, but it is pretty hands-off except for basting. Try out this ham and I promise you won’t be disappointed!

Coca-Cola Glazed Holiday Ham

This is a classic holiday ham recipe I have been making for Christmas and Easter for several years. The glaze is made with sugar and Coca-Cola, but I have also made it with Dr. Pepper. The recipe comes with instructions on how to make the diamond pattern on top of the ham, a really easy but elegant way to decorate your centerpiece. This recipe is a copycat version of the iced lemon loaf from Starbucks. It has a tangy lemon flavor in the moist cake and a thick lemon frosting on the top. It tastes best in the afternoon with a cup of tea, but my husband has informed me that since it has “cake” in the title it most certainly qualifies for dessert. If you have kids at your house this Easter, you’ll need at least one batch of these Rice Krispie Treats. To keep the spring color scheme, I poured a bag of Easter M&Ms in with the rice cereal. The chocolate mixed with the crunchy rice cereal is super delicious and a kid favorite. Sometimes I also wrap these in cellophane and put them in Easter baskets.

This is a simple carrot cake recipe adapted from Ina Garten’s cookbook that I turned into cupcakes. The inside is moist and cakey with a hint of cinnamon flavor while the outside has a crunchy top with the creamy cream cheese frosting. This is an easy dessert to prepare ahead of time and frost the day of. I simply topped the cupcakes with shredded carrots for a POP of color.

These are my three precious blessings: Joshua, Nevaeh, and Caleb. Unfortunately, we won’t have any family with us on Easter this year, but we are planning on having some friends over to celebrate. We wish you and your family a Happy Easter, or as we call it in my house, Resurrection Sunday! The new bulbs and pretty flowers remind us of the new life we have in Jesus Christ. No longer do we have to be bogged down in the mud of sin but we are set free to enjoy a life God has intricately planned for us.
