Coffee makes it possible to get out of bed. Cupcakes make it worthwhile. These bite-sized individual desserts cook much quicker than larger cakes, and have become the delight of dieters who don’t want to overindulge on their cheat day.

Tequila
Goes best on:
Vanilla cupcakes
You need: 100 gm butter; 225 gm icing sugar; juice and grated rind of 1 lemon; 2 tbsp gold tequila; 2 whole lemons; castor sugar; green food colouring; salt
Method: Beat the butter until creamy. Add the sifted icing sugar a little at a time. Add the lemon juice and rind, and beat well. Gradually add the tequila allowing the flavours to blend. You could add a little more if you want a strong tequila flavour. Add a few drops of green food colouring. Use a knife to spread the icing on a vanilla cupcake or fill it in a piping bag with a nozzle. Once you have frosted the cupcake, sprinkle it with a little castor sugar with green food colouring. Cut the lemons in thin round slices and top each cupcake with one slice. Add a sprinkle of salt to the lemon slice to complete the tequila experience.

Strawberry Curd
Goes best on:
Vanilla cupcakes
You need: 1 cup hung yoghurt; 4-5 strawberries; 2 tbsp castor sugar; 1 tbsp gelatine; 2 tbsp warm water
Method: Dissolve the gelatine in two tbsp of warm water and keep aside. Process the strawberries and castor sugar in a blender. Whisk together the hung yoghurt and the strawberry puree. Adjust the sugar according to taste (add a little powdered sugar if you want it sweet). Pour in the cooled gelatine and whisk again to achieve a thick, luscious curd. Spoon liberally onto cooled cupcakes and decorate with a strawberry sliver and a sprig of mint for colour.

White Chocolate Vodka
Goes best on: Vanilla or chocolate cupcakes
You need: 250 gm white chocolate; 300 gm soft cream cheese; 80 gm soft butter; 40 gm strawberry puree; 2 tbsp vodka
Method: Heat the chocolate in microwaveable bowl. In a food processor, pour the cream cheese, butter, strawberry puree and vodka. Pulse twice and mix. Scrape the sides with a spatula. Add the slightly cooled down white chocolate to this mixture with a spatula and fold the mix. Let it cool and pipe on cupcakes. Garnish the cupcakes with edible flowers or fresh strawberries.

Vanilla and Limoncello Cream Cheese
Goes best on: Vanilla cupcakes
You need: 100 gm butter, room temperature; 180 gm cream cheese, room temperature; 1 tbsp Limoncello; grated zest of half a lemon; 3 cups icing sugar; 3/4th teaspoon pure vanilla extract
Method: Beat butter and cream cheese with a mixer on medium-high speed until fluffy for 2 to 3 minutes. Reduce speed to low. Add sugar, 1 cup at a time, and then vanilla, Limoncello and lemon zest. Mix until smooth.

Coffee Butter Cream
Goes best on: Chocolate cupcakes
You need: 4 cups icing or powdered sugar, sifted; 1 cup unsalted butter, room temperature; 4 tbsp milk or light cream; 2 tsp coffee extract; assorted food colours (if desired); walnuts
Method: In a bowl, whisk the butter until smooth and well blended. Beat in the coffee extract. Slowly add in the sugar to the bowl and gradually beat the sugar into the butter. If using a mixer, put the mixer on low speed. Add the milk or light cream and beat frosting for about 5 minutes until it is light and fluffy. Add food colouring to the frosting after beating. When spooning frosting on the cupcakes, garnish each one with a couple of walnuts. If you are not using the frosting right away, cover it with a plastic wrap to prevent it from drying out.

Cream Cheese Icing
Goes best on: Red velvet cupcakes
You need: 2 1/3rd cups (300 gm) icing sugar, sifted; 3 tbsp (50 gm) butter, room temperature; 125 gm cream cheese, cold
Method: Beat the powdered sugar and butter together in a bowl on medium speed until it comes together and is well mixed. Add the cream cheese all at once and beat until incorporated. Turn the mixer to high speed and beat for 5 minutes, or until the frosting becomes light and fluffy. Be careful not to overbeat or the icing might get runny.
